Easter M&M Pie

If you've got grandparents that like to send home
approximately 90 M&M eggs per child at Easter,
you may want to consider this pie.
M & M pie
For me, it's better to use up a bunch of candy all at once,
rather than leave it on the counter to be begged for
and eaten all day long for weeks on end.
So the kids and I did some baking!
We enjoyed this tasty little treat after dinner tonight.
And though we've still got some unopened M&M eggs left,
there certainly are a lot less of them.

Apparently, I deal with an overabundance of M&Ms every Easter,
because it was right after Easter three years ago,
that I first posted this dessert recipe.
Look how small they were helping me back then!
They grow so fast!

Here's a link to the original post with the full recipe.
Hope you had a great Easter!

Oreo Cheesecake Cookies

When your kids get new aprons in the mail from their grandma,
they're going to want to bake!
So we found a quick, kid-friendly cookie recipe,
with only 5 ingredients:
Oreo Cheesecake Cookies!

Throw some butter and cream cheese into a stand mixer,
and whip it up,

until it's light and fluffy.
Then add in some sugar and flour,
and mix together until just incorporated.
Next, get your Oreos ready.
The recipe we looked at called for crushing up about 10 large cookies,
but we had little snack-sized bags around the house
so Ruby crushed some,
and Walter crushed some,
and then we mixed them into the dough.
Cover the bowl and chill dough in the refridgerator for about a half hour,
before rolling out balls and slightly flattening them onto a cookie sheet.
Pull them out of the oven after about 10 minutes
when the edges of the cookies are turning golden.
The kids ate one (or maybe four) after they cooled.
They were small.
And tasty.
It was a fun little recipe.
You should give it a try with your little ones.

Oreo Cheesecake Cookies
4 oz. cream cheese, softened
8 Tbsp butter, at room temperature
3/4 c. sugar
1 c. & 2 Tbsp flour
About 10 large Oreo cookies, broken into pieces or 2-3 bags of crushed mini Oreos

Beat together cream cheese and butter in a stand mixer until light and fluffy. Mix in sugar and slowly add in flour, beating on low, until just incorporated. Fold in crushed Oreos until evenly distributed. Cover bowl with plastic wrap and refrigerate for about a half hour.
Preheat oven to 350 degrees. Roll cooled dough into balls and lightly press down on each ball before baking. Bake for about 10 minutes, until golden around edges.

Some Things Never Change

Check this out -
Adam's been dragging Emily around in a diaper box lately
because she gets such a kick out of it.
Turns out he was doing the same thing to Walter five years ago,
when he was Emily's age.
Check out this adorable post from 2011.
Oh the memories!
