Chicken Enchilada Quinoa Bake

How delicious does this
Chicken Enchilada Quinoa Bake look?
Yeah, I know.
Here's what you need -
First, grab your Quinoa.
Prepare enough, according to the directions on the package,
to have 2 1/2 cooked cups available.
While that's cooking,
dice a small onion -
and cook until tender in about two tablespoons olive oil.
Add in shredded chicken -
We went easy with Rotisserie chicken!
Next, open and rinse a can of black beans -
and dump them in as well.
Then, add a can of green chiles.
And then it's time for enchilada sauce!
After a dash of chili powder -
Your dish is really starting to take shape.
Grab 2 1/2 cups of cooked quinoa -
and add it to the mix.
Mix until fully combined -
and then add in some cheddar cheese.
Transfer everything to a baking dish
before topping it with Pepper Jack cheese.
Toss it in the oven at 350 degrees for about 10-15 minutes
and then broil it for a minute or two to get the cheese bubbly.
While it is cooking, slice up an avocado -
Chop some cilantro and grab sour cream for topping.
It comes out looking so amazing you'll just want to dive in!
Seriously good.
We've already had it twice.

Sour cream
Sliced avocado

Flowerpot Makeover

We've had this big red flowerpot on our doorstep for years.
I asked people where we should put it back when we first got it
and we've been filling it full of flowers every year since.

When we were dragging it out this spring,
I found I was tiring of the red pot.
It was time for something new.
The doorstep needed a different color.
Hey, where did that kid come from?
Sure, we could've ran out and bought a new pot,
but there was nothing wrong with this one,
so we went with a $3 makeover with some outdoor spray paint.
We just sprayed a few thin coats on the outside
and around the inside rim,
allowing it to dry in between coats.
Hey, there's that little turkey sneaking into my photos again!
Once the yellow paint thoroughly covered the pot and dried,
it was time to plant!
Guess who turned up for that . . .

I think the flowerpot turned out great!
BEFORE:
AFTER:

It is just the pop of color the front step needed!

 Quick, cheap and easy -
the best kind of project!
It's a refreshing look on the front step reusing what we already had.
Get out there and revamp something with a little spray paint!
Happy Spring!

Kicking It!

Ruby's been dying to play soccer,
so we signed her up this spring and she's loving it!
She's on a team with her best bud from our neighborhood.
They have a great time at practice.
And Ruby loves playing with all of her buddies at games!
It's so fun to watch her do her thing.
And there's nothing like the smile on her face coming off the field.

We love you, little soccer star!
