Parmesan Baked Broccoli

I showed off this fresh broccoli dish I was making
on Instagram the other night.
Just chop fresh broccoli and toss it in a large bowl
with all of the listed ingredients and toss until fully coated.
Then dump it out to bake on a baking sheet lined
with tin foil for easy clean up!
Bake for about 20-25 minutes and you'll get a tasty side dish for any meal!
In case anyone was concerned that I had suddenly become a gourmet cook,
I fully disclosed that I was serving the broccoli side dish up with fish sticks.
Ha ha - just keeping it real!
We had hockey and so I was looking for quick and easy,
but was happy to get an unprocessed side dish included in a fast, dinner meal.
Remember, no one has it all together all the time!
Make whatever good choices you can
and don't stress about the rest.
Let me know if you give this a try. We loved it.

Parmesan Baked Broccoli

1 lb fresh broccoli, cut into pieces or florets
3-4 Tbsp olive oil
3 garlic cloves, minced
1/2 tsp salt
1/2 tsp pepper
1/4 c. Panko bread crumbs
1/3 c. shredded Parmesan cheese
1 lemon, juice (optional)

Preheat oven to 425 F. Clean and cut up 1 lb fresh broccoli. Place in a large bowl. Add olive oil, garlic, salt, and pepper and stir until broccoli is completely coated. Add in bread crumbs and shredded Parmesan cheese. Stir until well mixed. Line a baking sheet with tin foil and lightly coat with cooking spray. Spread broccoli onto baking sheet and bake in oven for about 20-25 minutes. Remove when broccoli is browned and softened. Cut a lemon in half and squirt fresh juice over the baked broccoli. Serve up this great side dish along any meal.
