Toffee Shortbread Bars

I like to bake.
And luckily, my kids like to do it with me,
so I end up doing a lot of baking.
It's a stress reliever for me
and I enjoy trying new recipes.

I post a lot of our baking pics on Instagram.
In the old days of this blog,
I used to take pictures while making each recipe
and put up step-by-step instructions.

These days I may not have time to be so thorough,
but I figured I could still put up the recipes I Instagram,
so that I have an easy place to direct people to
when they want to know how to make it.

So here you go -
Tonight, we made Toffee Shortbread Bars.
They were a big hit.
Give them a try!

Toffee Shortbread Bars
3/4 c. butter, softened
3/4 c. brown sugar
1 1/2 c. flour
1 c. sweetened condensed milk
2 Tbsp butter
2 c. chocolate chips
1 1/2 c. toffee bits

Beat 3/4 c. softened butter and brown sugar together until combined. Add flour and mix well. Line a 9 x 13 inch pan with tin foil and coat with cooking spray. Press the shortbread crust mixture into prepared pan. Bake at 350 degrees for 15 minutes. In a saucepan heat sweetened condensed milk and 2 Tbsp butter together until smooth, stirring frequently. Pour over shortbread crust. Bake 12 minutes until filling is bubbly and browned. Immediately sprinkle chocolate chips on top of filing. Return to oven for 2 minutes to allow chips to soften. Remove from oven and carefully spread the chocolate over top of the bars. Sprinkle with toffee bits, pressing them down into the chocolate layer. Refrigerate until completely cooled and cut into squares.
