Peanut Butter Chocolate Bars

Do these look delicious or what?
I saw them on Pinterest and knew I had to make them!
 Here are the ingredients:

They have a cake mix in them!
Who would've guessed?

You just put the cake mix, some melted butter, eggs
and peanut butter in a large bowl -
And beat it all together with an electric mixer,
until it looks like this.
Then set some of the dough aside,

and press the rest into the bottom of a 9 x 13 inch pan.
Heat butter and sweetened condensed milk in a saucepan,
and stir in a bag of chocolate chips
until melted and add some vanilla.
Then pour the chocolate mix over the pan of dough -

and smooth it out evenly.
Finally, crumble the remaining dough on top -
until evenly covered and bake.
Here they are fresh out of the oven,
and cooled enough to slice.
I served them warm with a scoop of vanilla ice cream
because I knew they'd be rich.
They were almost like a melty cookie -
warm, gooey, chocolatey.
Loved them!

Peanut Butter Chocolate Bars

1 (18.25) package plain yellow cake mix
(I used a Golden Butter cake mix instead)
1/2 cup butter, melted
1 cup creamy peanut butter
2 eggs
1 (12 oz) package semi-sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
2 Tablespoons butter
2 teaspoons vanilla

Combine cake mix, melted butter, peanut butter, and eggs in a large bowl using a mixer or spoon. Press this into a 9 x 13 inch pan reserving 1 1/2 cup of the mixture to crumble on top. In a small pot, melt chocolate chips, sweetened condensed milk, and butter. Remove from heat and stir in the vanilla. Spread chocolate mixture over the dough pressed in the pan and then crumble the 1 1/2 cups of reserved dough mixture on top evenly. Bake for 20-25 minutes at 325. For a real treat, serve warm with ice cream.

Tooth News

I recently sat down with Miss Ruby for a little chat.
Her top two front teeth are coming in
and I wanted to document the moment.
Hey Ruby - open up!

Thank you.

Now say cheese so we can see those toofers -
Put your foot down, you nut!
There!
The top two are barely peeking through,
but now she's got 4.

Chicken and Broccoli Stuffed Crescent Roll

I pinned this recipe the other day
and Adam whipped it up the other night.
 Just a few ingredients -

makes something this pretty -
And it's easy to do -
just lay out 2 cans of crescent rolls and connect them.
Then cube and cook some chicken -

and stir in some shredded cheddar cheese and miracle whip.
Steam some broccoli and add that as well -
 before mixing everything together,
and stuffing it into the crescent roll dough.
You can slice the crescent rolls and braid it together
to make it even prettier -
but Adam didn't want to waste time braiding bread
we were just going to eat, so he just pinched it shut.
(Or maybe he doesn't know how to braid?
He better figure it out when Ruby's hair gets longer!)

Anyways, he scrambled an egg yolk -
and brushed it on top of the dough and sprinkled on some Rosemary.

Here is the finished product after baking for about a half hour.
We sliced and ate it and both discovered
that we found the Rosemary flavor a little overpowering
and would not put it on if we make this recipe again.
 It was good,
I mean I love flaky crescent rolls as much as anyone,
but I feel like we could improve upon this recipe
by stuffing more tasty goodness inside.
I'll let you know if we get creative or
tell me if you try it with some ideas of your own.

Chicken & Broccoli stuffed Crescent Roll
2 cans Pillsbury Original Crescent Rolls
2 cups chicken chunks, cooked
2 cups cheddar cheese
2 cups broccoli, frozen, steamed and chopped
1/2 cup light mayonnaise
1 egg yolk

Rosemary

Preheat oven to 375 degrees.Spread both cans of crescent rolls lengthwise to form a long rectangle on a cookie sheet.Press the seams together to form a single layer of dough. In a large bowl, combine chicken, cheese, broccoli and mayonnaise. Spread mixture over the center of the dough evenly to create a log. Fold the dough over the top of the chicken mixture, brush the top of the dough with a beaten egg yolk, sprinkle on some Rosemary, and bake for 28 – 30 minutes until golden brown.

Book Hangover

When's the last time you stayed up way too late
finishing a book you just couldn't put down?
I recently neglected the piles of dishes in my kitchen
and the toys scattered all over the living room floor
because I was sucked into this book -
I was tired the next day,
but it was a great read and coffee is a fabulous cure.
Also, this book is the first in a trilogy,
so hopefully there are two more great reads ahead!

What's the last book you couldn't put down?

Gingerbread Fun

Here is one last post about Christmas
because the pics are too cute not to share.
This is Walter and his auntie Melissa
getting ready to make his first ever gingerbread house.

She brought all of the supplies and helped Walt
and his cousins Ally & Emma
 make some beautiful masterpieces.

Here he is assembling the basic structure -
and then it was time to decorate!
Walt went with colored marshmallows for the roof -

but I often found him doing more of this than decorating.
But we kept building -
while Ruby cheered us on!
After tons of fun and hard work -
and opening a zillion peppermint candies to cover the ground -
Walter threw his hands up and announced he was "all done!!"
He's pretty proud of his first gingerbread house.
It's still sitting on our dining room table.
It might still be there next Christmas : )
